{Pinned there, Done That} Crockpot White Bean Chicken Chili

I found this recipe from Baked in the South on a blog post about crockpot freezer meals... and I kept losing the recipe, so I'm going to share it as one of my {Pinned There, Done That} posts!
I threw in a can of red beans instead of only white beans this time

White Chicken Chili
src: Baked in the South
2 T. olive oil
1 T corn starch
1 medium onion chopped
1 can chopped green chilis, drained
2 cans white beans (drained)
2 t. cumin
2 t. chili powder
1 lb chicken tenders
2 cups chicken stock
1 t. salt
1 t. pepper
Place all ingredients except chicken stock in large freezer bag, toss to coat and freeze.
When ready, place ingredients in slow cooker, add chicken stock and cook on low for 4-5 hours.
Remove chicken, shred & return to crockpot.  Serve with warm cornbread.

The Verdict?
It is super simple, has great flavor, and my 3 children (and hubby) eat it.
We have it like every other week, I highly recommend it!

Wyatt - Playing Catch up

Month 2 (sept-Oct)
What activities did Wyatt do during his 2nd month?
Went to his first baby shower
Had his first bottle -- success!
Was the guest of honor at his "Sip n See" party with tons of guests!
Went to the pumpkin patch (several times)
Mommy's birthday
Lots of walking to and from sissy's school
Sissy's speech therapy sessions

How is Wyatt sleeping?
More of the same at the beginning - bed around 9:30pm, up around 3:30/4.
There was one fantastic night that he didn't wake up until 5am for my birthday (thanks buddy!) which kicked off a trend of sleeping until 7/7:30!! YES!

What "skills" has Wyatt mastered?
He is way more alert and will follow with his eyes
He is beginning to grasp fingers and toys
He holds his head up REALLY well!
Beginning to coo and make noises other than crying
We are working on Tummy Time

What activities did Wyatt do during his 3rd month?
Halloween!
Soccer practice and games
Road trip up to Georgia for Thanksgiving on the lake
Lots of walking to and from sissy's school

Gotten into a pattern of 9:30-5:30

What "skills" has Wyatt mastered?

Soccer practice and games
Lots of walking to and from sissy's school
Sissy's Christmas concerts
1st Christmas at home
Slept at Mimi's house for the first time while Mommy and Daddy hosted a Cocktail Party
How is Wyatt sleeping?

What "skills" has Wyatt mastered?
Batting and eventually grabbing onto toys to chew on them

Any milestones?
LOTS of coos and noises
Rolled back to front at the beginning of the month, was rolling back to front and front to back consistently by the end of the month
